Heres my quick fix for any time of the day! So delicious. So quick. It’s been our go-to for each last minute “what to make for dinner” moment. Spruce up this recipe with different dressings or some dried cranberries. Enjoy!
Ingredients…
(Serves 2)
- medium-large sized mushroom per person (depending on how hungry you are)
- 1 avocado
- 2 cherry tomatoes
- 1 clove garlic, chopped
- 2 tsp. cashew cheese (optional)
- handful cilantro (coriander)
- salad leaves
- dash tamari/soy
Method…
Mix up the avocado, 1 chopped cherry tomato, the garlic- make a guacamole
dress plate with cilanto, salad and slice of cherry tomato
put mushroom on plate (remove stalk).
spoon a bit of cashew cheese on top of mushroom.
top with guac.
trickle over tamari.
Done.
